Spicy Beef Skewers with Honey-Soy Glaze

Ingredients
  

Beef Mixture

  • 1 lb ground beef
  • 1/4 cup breadcrumbs
  • 1 egg lightly beaten
  • 2 cloves garlic minced
  • 1/4 cup scallions finely chopped (green parts only)
  • 1 tablespoon soy sauce
  • 1 teaspoon ginger grated
  • 1/2 teaspoon red pepper flakes (or more, to taste)
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Glaze

  • 1/4 cup honey
  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 teaspoon sesame oil

Other

  • Wooden skewers (soaked in water for 30 minutes if grilling)

Instructions
 

Preparation

  • In a large bowl, combine the ground beef, breadcrumbs, egg, garlic, scallions, soy sauce, ginger, red pepper flakes, and black pepper, mixing gently until just combined.
  • Divide the meat into 16-18 portions, form them into logs, and thread onto wooden skewers.
  • Whisk together honey, soy sauce, rice vinegar, and sesame oil in a small bowl to create the glaze; set aside.

Cooking

  • Heat olive oil in a large skillet or preheat your grill to medium-high.
  • Cook the skewers for 3-4 minutes per side (2-3 minutes if grilling) until browned and cooked through.
  • Brush the skewers generously with the honey-soy glaze during the last 2 minutes of cooking to allow it to caramelize slightly.

Serving

  • Remove the skewers from heat and serve immediately, garnishing with extra scallions if desired.

Notes

Soaking wooden skewers prevents them from burning during cooking. Adjust red pepper flakes to your preferred spice level.
