Spiced Cranberry & Brie Puff Pastry Pinwheels

Pastry

  • 1 sheet (about 14 oz) frozen puff pastry, thawed
  • 1 egg, beaten (for egg wash)
  • Flaky sea salt optional, for sprinkling

Filling

  • 1/2 cup cranberry sauce store-bought or homemade
  • 4 oz Brie cheese, rind removed and finely diced
  • 1/4 teaspoon ground cinnamon
  • ground cloves Pinch of

Instructions
 

Preparation

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  • On a lightly floured surface, carefully unroll the thawed puff pastry sheet.

Assemble Pinwheels

  • In a small bowl, combine cranberry sauce, diced Brie cheese, ground cinnamon, and ground cloves, mixing well.
  • Spread the cranberry and Brie mixture evenly over the puff pastry, leaving a 1/2-inch border along one long edge.
  • Starting from the long edge opposite the border, tightly roll the puff pastry into a log.
  • Brush egg wash along the unspread border and gently press to seal the log.
  • Using a sharp knife, slice the log into 1/2-inch thick rounds.

Bake

  • Place pinwheels cut-side up on the prepared baking sheet, ensuring space between them.
  • Brush the tops with remaining egg wash and sprinkle with flaky sea salt, if desired.
  • Bake for 15-18 minutes until golden brown, puffed, and Brie is melted and bubbly.

Serve

  • Cool on the baking sheet for a few minutes before transferring to a serving platter.
  • Garnish with fresh rosemary sprigs if desired and serve warm.

Notes

Ensure puff pastry is fully thawed before unrolling to prevent tearing. For a crispier crust, ensure a generous egg wash and bake until deeply golden. These pinwheels can be assembled ahead of time and refrigerated before baking for convenient party preparation.
