Pancakes

  • 1 cup all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1 large egg
  • 1 cup milk
  • 1/2 cup finely grated apple about 1 small apple
  • 2 tablespoons melted butter plus more for greasing
  • 1 teaspoon vanilla extract
  • Maple syrup Optional: for serving
  • whipped cream Optional: for serving

Instructions
 

Preparation

  • In a large bowl, whisk together all the dry ingredients: flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • In a separate medium bowl, whisk the egg, milk, grated apple, melted butter, and vanilla until well combined.
  • Pour the wet ingredients into the dry ingredients. Stir gently until just combined, being careful not to overmix, then let the batter rest for 5-10 minutes.

Cooking

  • Heat a lightly buttered griddle or non-stick skillet over medium-low heat. Pour about 1/4 cup of batter per pancake.
  • Cook for 2-3 minutes per side until golden brown and cooked through. Serve immediately with your preferred toppings.

Notes

Avoid overmixing the batter for tender pancakes. Adjust cooking time based on your griddle and desired doneness. Best served warm with maple syrup or whipped cream.
