  • 1 lb lean ground turkey
  • 1 chopped small onion
  • 2 minced cloves garlic
  • 1 14.5-ounce can diced tomatoes undrained
  • 1/2 cup chicken broth (or vegetable broth)
  • 1/2 cup heavy cream (or half-and-half for a lighter option)
  • 1/2 tsp dried Italian seasoning
  • 1/4 tsp red pepper flakes (optional, for a slight kick)
  • 2 cups fresh spinach
  • 1/4 cup grated Parmesan cheese plus more for serving
  • Salt and black pepper to taste

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Cook ground turkey until no longer pink, then drain excess fat.
  • Add chopped onion to the skillet and cook until softened. Stir in minced garlic and cook until fragrant.
  • Stir in diced tomatoes, chicken broth, heavy cream, Italian seasoning, and red pepper flakes (if using). Bring to a gentle simmer.
  • Reduce heat to medium-low, cover, and cook for 5-7 minutes to allow flavors to meld and sauce to thicken.
  • Stir in fresh spinach and cook until wilted.
  • Remove from heat and stir in Parmesan cheese. Season with salt and black pepper to taste.
  • Serve immediately, topped with additional Parmesan cheese.

Notes

For a spicier kick, increase the amount of red pepper flakes. You can also add other vegetables like bell peppers or zucchini for added nutrition and flavor.
