  • 2 large eggs
  • 1 tablespoon milk dairy or non-dairy
  • 1/4 cup fresh spinach roughly chopped
  • 2 tablespoons crumbled feta cheese
  • 1/2 tablespoon olive oil or butter
  • Salt and freshly ground black pepper to taste
  • red pepper flakes Optional: a pinch for a little kick

Instructions
 

Preparation

  • In a small bowl, whisk together the eggs, milk, salt, pepper, and red pepper flakes if using, until well combined.
  • Heat the olive oil or butter in a small non-stick skillet over medium heat.

Cooking

  • Pour the egg mixture into the hot pan and let it cook undisturbed for about 30 seconds until the edges begin to set.
  • Add the chopped spinach to the pan.
  • Gently push cooked egg from the edges towards the center, allowing uncooked egg to flow underneath.
  • Continue to cook, stirring gently, until the eggs are mostly set but still slightly moist.
  • Stir in the crumbled feta cheese until just combined and warmed through.

Serving

  • Remove from heat immediately and serve hot, either by itself or with a slice of whole-wheat toast.

Notes

For extra flavor, try adding a pinch of garlic powder or onion powder to the eggs when whisking them. If you prefer a creamier scramble, you can add a tablespoon of cream cheese along with the feta.
