  • 1/4 cup fresh spinach, roughly chopped
  • 1 ounce feta cheese, crumbled
  • 1 slice whole-grain bread, toasted (optional, for serving)

  • In a small bowl, whisk together the eggs, milk, salt, and pepper until they are well combined.
  • Heat a small non-stick pan over medium heat, then add the olive oil or butter.
  • Pour the egg mixture into the hot pan; as the edges set, gently push the cooked egg towards the center to allow the uncooked egg to flow underneath.
  • When the eggs are mostly set but still slightly wet, add the chopped spinach and crumbled feta cheese, then continue to cook and stir until the spinach wilts and the eggs reach desired doneness.
  • Serve your scramble immediately, with an optional slice of whole-grain toast.
