  • 1 tbsp olive oil
  • 1 lb medium shrimp, peeled and deveined
  • 3 cloves garlic, minced
  • 1/4 cup dry white wine or chicken broth
  • 1/2 tsp red pepper flakes optional
  • 2 medium zucchini, spiralized into noodles
  • 1/4 cup fresh parsley, chopped
  • 1 tbsp lemon juice
  • Salt and freshly ground black pepper to taste
  • Grated Parmesan cheese for serving (optional)

  • Heat olive oil in a large skillet over medium-high heat.
  • Add shrimp to the skillet and cook for 1-2 minutes per side until pink. Remove the shrimp and set aside.
  • Sauté minced garlic and red pepper flakes in the same skillet for about 30 seconds until fragrant.
  • Pour in white wine or chicken broth, scraping up browned bits, and simmer for 1-2 minutes to reduce.
  • Add spiralized zucchini noodles and toss with the sauce for 2-3 minutes until tender-crisp.
  • Return the cooked shrimp to the skillet, then add chopped parsley and lemon juice; toss gently.
  • Season the dish with salt and pepper to taste.
  • Serve immediately, optionally topped with grated Parmesan cheese.

Notes

For extra flavor, you can marinate the shrimp in a little lemon juice and garlic powder before cooking. Adjust the amount of red pepper flakes to your preferred spice level. If you don't have a spiralizer, you can use a vegetable peeler to create wide ribbons of zucchini instead of noodles.
