  • 1 pound large or jumbo shrimp, peeled and deveined fresh or frozen, thawed
  • 1 large head of broccoli, cut into bite-sized florets
  • 4 tablespoons unsalted butter, melted
  • 4-5 garlic, minced or 1 ½ - 2 teaspoons pre-minced
  • 2 tablespoons olive oil
  • 1 lemon half thinly sliced for roasting, half for juicing at the end
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon red pepper flakes optional, for a little kick
  • Salt and freshly ground black pepper to taste

Cooking Steps

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • Toss the broccoli florets with 1 tablespoon of olive oil, salt, and pepper; then spread them on the baking sheet and roast for 8-10 minutes.
  • Pat the shrimp dry, then combine them in a bowl with melted butter, minced garlic, the remaining 1 tablespoon of olive oil, oregano, parsley, red pepper flakes, salt, and pepper, tossing to coat evenly.
  • Remove the sheet pan from the oven, push the broccoli to one side, and add the seasoned shrimp and lemon slices to the other side.
  • Return the pan to the oven and roast for another 8-12 minutes, until the shrimp are pink and the broccoli is tender.
  • Remove from the oven and squeeze fresh lemon juice over the entire dish before serving.

Notes

For extra flavor, marinate the shrimp for 15-20 minutes before roasting. Adjust red pepper flakes to your desired level of spice.
