  • 1 pound Italian sausage mild, medium, or hot; ground pork sausage also works
  • 1 tablespoon olive oil optional, for sautéing
  • 1 medium onion diced
  • 2-3 garlic minced
  • 1 can (28 ounce) crushed tomatoes fire-roasted if available
  • 1/2 cup chicken or vegetable broth
  • 1 teaspoon dried oregano or Italian seasoning blend
  • 1/2 teaspoon red pepper flakes optional
  • Salt and black pepper to taste
  • 12 ounces pasta penne, rotini, farfalle, or fusilli recommended

For Serving

  • 1/4 cup fresh parsley chopped, for garnish
  • Grated Parmesan cheese for serving

Cooking Steps

  • Bring a large pot of salted water to a boil and cook pasta until al dente, reserving 1 cup of pasta water before draining.
  • Brown Italian sausage in a large skillet, breaking it up as it cooks, then drain excess grease and set aside.
  • Sauté diced onion in the same skillet until softened, then add minced garlic and red pepper flakes and cook until fragrant.
  • Pour in crushed tomatoes and broth, stir in oregano, salt, and pepper, then simmer for 10-15 minutes.
  • Return cooked sausage to the sauce, add drained pasta, and toss to coat.
  • Adjust seasoning, stir in fresh parsley, and serve immediately with Parmesan cheese.

Notes

For extra flavor, consider using fire-roasted crushed tomatoes. Adjust the amount of red pepper flakes to your spice preference.
