  • 1 red onion chopped into wedges

  • 2 tbsp olive oil
  • 1 tsp dried oregano
  • 0.5 tsp garlic powder
  • 0.25 tsp salt
  • 0.125 tsp black pepper
  • 1 lemon thinly sliced
  • 2 tbsp fresh parsley chopped (for garnish)

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • In a spacious bowl, combine the chicken, broccoli, bell peppers, and red onion, then drizzle with olive oil and sprinkle with oregano, garlic powder, salt, and pepper.
  • Toss everything gently to ensure even coating, then spread the mixture in a single layer on the prepared baking sheet and arrange lemon slices over the top.
  • Bake for 20-25 minutes, or until the chicken is thoroughly cooked and the vegetables are tender-crisp.
  • Before serving, garnish the dish with fresh chopped parsley.

Notes

For extra flavor, marinate the chicken and vegetables for 15-30 minutes before baking. You can also customize the vegetables to your liking with options like zucchini, asparagus, or cherry tomatoes.
