  • 1 lb lean ground beef
  • 1 tbsp canola oil or other high smoke point oil
  • 3 cups broccoli florets
  • 1 red bell pepper thinly sliced
  • 1/2 onion diced
  • 3 garlic minced
  • 1 tbsp fresh ginger grated

Sauce

  • 1/3 cup low sodium soy sauce or tamari for GF
  • 2 tbsp honey
  • 1 tbsp rice vinegar
  • 1 tsp sesame oil
  • 1/2 cup beef broth
  • 1 tbsp cornstarch

Garnish & Serving Suggestion

  • toasted sesame seeds
  • sliced green onions
  • cooked white rice or cauliflower rice

Instructions
 

Preparation

  • Chop all vegetables, mince the garlic, and grate the ginger.
  • Whisk together soy sauce, honey, rice vinegar, sesame oil, beef broth, and cornstarch in a small bowl until smooth to create the sauce.

Cooking

  • Heat 1 tablespoon of cooking oil in a large skillet or wok over medium-high heat.
  • Add the ground beef and cook, breaking it apart, until fully browned, then drain any excess fat.
  • Add the diced onion and cook for 2-3 minutes until softened; then stir in minced garlic and grated ginger and cook for another minute until fragrant.
  • Add broccoli florets and sliced red bell pepper to the pan and stir-fry for 4-5 minutes until tender-crisp.
  • Re-whisk the sauce and pour it over the beef and vegetables, then bring to a simmer, stirring continuously, until the sauce thickens and coats everything.

Serving

  • Remove from heat and garnish with toasted sesame seeds and sliced green onions, if desired.
  • Serve hot over your choice of rice, such as white rice or cauliflower rice.

Notes

This recipe is easily adaptable to your favorite vegetables; feel free to add snap peas, carrots, or mushrooms. For a spicier kick, add a pinch of red pepper flakes with the garlic and ginger.
