This speedy ground turkey and veggie stir fry is a perfect weeknight meal. Lean ground turkey is stir-fried with a colorful array of fresh vegetables and coated in a savory, slightly sweet sauce.

Ingredients
  

Stir Fry

  • 1 tablespoon olive oil
  • 1 pound ground turkey
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 head broccoli, cut into small florets
  • 1 red bell pepper, thinly sliced
  • 1 carrot, julienned or thinly sliced
  • 1/2 cup snap peas
  • Salt to taste
  • black pepper to taste

Sauce

  • 2 tablespoons soy sauce
  • 1 tablespoon rice vinegar
  • 1 tablespoon honey or maple syrup
  • 1 teaspoon cornstarch
  • 1/4 cup chicken or vegetable broth

Optional Garnish

  • sesame seeds
  • chopped green onions
  • sriracha

Instructions
 

Preparation

  • In a small bowl, whisk together soy sauce, rice vinegar, honey/maple syrup, cornstarch, and broth; set aside.
  • Heat oil in a large skillet or wok over medium-high heat, then add ground turkey and cook until no longer pink, draining excess fat.

Cooking

  • Push turkey to one side and add minced garlic and grated ginger to the empty side, cooking for 30-60 seconds until fragrant before combining with the turkey.
  • Add broccoli and carrots to the pan, sautéing for 3-4 minutes until tender-crisp.
  • Stir in red bell pepper and snap peas, cooking for another 2-3 minutes until brightly colored and crisp-tender.
  • Re-whisk the sauce and pour it over the turkey and vegetables, stirring constantly for 1-2 minutes until thickened and evenly coated.
  • Season with salt and pepper to taste, then remove from heat and serve hot, optionally garnished with sesame seeds or green onions.

Notes

For a spicier kick, add a dash of sriracha to the sauce. Feel free to customize the vegetables based on what you have on hand or prefer, such as mushrooms, snow peas, or water chestnuts.
