Speedy Chili Lime Salmon Bowls with Roasted Vegetables

These Speedy Chili Lime Salmon Bowls come together quickly for a healthy and flavorful meal. Roasted vegetables and chili-lime marinated salmon are served over rice or quinoa and garnished with fresh cilantro.

Ingredients
  

For the Salmon & Marinade

  • 4 salmon fillets (6 oz), skin-on or skinless
  • 3 tbsp fresh lime juice divided
  • 1 tsp lime zest
  • 1 tbsp chili powder (or ancho chili powder)
  • 2 garlic cloves, minced
  • 1 tbsp honey or maple syrup
  • 2 tbsp olive oil divided
  • 1 tbsp soy sauce or tamari
  • 1/2 tsp salt divided
  • 1/4 tsp black pepper divided

For the Bowls

  • 1 cup uncooked rice or quinoa
  • 3 cups assorted vegetables (e.g., broccoli florets, asparagus, bell peppers, snap peas), chopped
  • 1/4 cup fresh cilantro or green onions chopped, for garnish

Instructions
 

Preparation

  • Whisk together 2 tablespoons lime juice, lime zest, chili powder, minced garlic, honey, 1 tablespoon olive oil, soy sauce, 1/4 teaspoon salt, and 1/8 teaspoon black pepper to create the marinade.
  • Place salmon in a shallow dish or Ziploc bag, pour marinade over it, and marinate for 15-30 minutes while preheating the oven to 400°F (200°C) and cooking rice or quinoa.

Cooking

  • Toss chopped vegetables with 1 tablespoon olive oil, 1/8 teaspoon salt, and 1/8 teaspoon black pepper on a baking sheet and roast for 10-15 minutes until tender-crisp.
  • Place marinated salmon on a separate parchment-lined baking sheet and bake for 12-18 minutes until cooked through (alternatively, cook on stovetop).

Assembly & Serving

  • Divide cooked rice or quinoa among four bowls, then top with roasted vegetables and a salmon fillet.
  • Garnish with fresh cilantro or green onions, drizzle with the remaining 1 tablespoon of fresh lime juice, and serve immediately.

Notes

For a spicier kick, add a pinch of cayenne pepper to the marinade. If you don't have fresh lime, bottled lime juice can be used, but fresh is always recommended for the best flavor.
