  • 1 lb ground turkey or chicken sausage
  • 12 large eggs
  • 1 cup milk
  • 1/4 cup chopped green chilies (canned, drained)
  • 1/2 tsp cumin
  • 1/4 tsp chili powder
  • Salt and pepper to taste
  • 6-8 slices white or wheat bread, cubed
  • 1.5 cups shredded Colby Jack cheese
  • 1/2 cup black beans, rinsed and drained
  • 1/4 cup chopped fresh cilantro (for garnish)

Instructions
 

Preparation

  • Brown the ground turkey or chicken sausage in a large skillet over medium-high heat, breaking it up as it cooks; drain excess fat and set aside.
  • In a large bowl, whisk eggs, milk, green chilies, cumin, chili powder, salt, and pepper until well combined.
  • Grease a 9x13 inch baking dish and spread the cubed bread evenly across the bottom.
  • Scatter the cooked sausage, shredded Colby Jack cheese, and black beans over the bread.
  • Carefully pour the egg mixture evenly over all layers, ensuring the bread is well saturated.

Baking

  • Cover the baking dish tightly and refrigerate for 8 hours or overnight.
  • Preheat oven to 375°F (190°C) the next morning; remove casserole from refrigerator and uncover.
  • Bake for 45-55 minutes, or until golden brown and the center is set.

Serving

  • Let cool for a few minutes before slicing and serving. Garnish with fresh cilantro and offer salsa, sour cream, or avocado on the side.

Notes

This casserole is a great make-ahead option for busy mornings or feeding a crowd. Adjust spice levels to your preference by adding more or less chili powder/green chilies. You can also experiment with different types of cheese or add other vegetables like diced bell peppers or onions.
