  • 1 medium Red onion, finely diced
  • 3 cloves Garlic, minced
  • 1 large Jalapeño, deseeded and minced
  • 2 tablespoons Chipotle in adobo sauce, minced
  • 1 teaspoon Cumin, ground
  • 1 tablespoon Smoked paprika
  • 1/2 teaspoon Oregano, dried
  • 1 tablespoon Vegetable or olive oil
  • 2 tablespoons Lime juice

The Gooey Goodness

  • 2 cups Monterey Jack cheese, shredded
  • 1 cup Cheddar cheese, shredded sharp for extra tang
  • 1/2 cup Queso fresco, crumbled optional, for a salty finish

The Finishing Touches (Toppings)

  • 1/2 cup Fresh cilantro, chopped
  • 1 ripe avocado Avocado, diced or guacamole
  • 1/2 cup Sour cream or Greek yogurt
  • 1/2 cup Salsa your favorite kind, or homemade
  • 1/4 cup Pickled red onions for a tangy contrast
  • Hot sauce for an extra kick, to taste

Instructions
 

Prepare Your Potions (Pre-heating & Prep)

  • Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper. Measure and ready all ingredients.

Conjuring the Black Bean Mixture

  • Heat oil in a skillet over medium heat, sauté red onion until softened (3-5 minutes). Add garlic and jalapeño; cook for 1-2 minutes until fragrant. Stir in black beans, chipotle, cumin, smoked paprika, and oregano; cook 5-7 minutes. Remove from heat and stir in lime juice.

Layering the Enchantment

  • Arrange half of the tortilla chips on the baking sheet. Spoon half of the black bean mixture and sprinkle half of both Monterey Jack and Cheddar cheeses. Repeat layers with remaining chips, bean mixture, and cheeses, adding queso fresco if desired.

Activating the Magic (Baking/Broiling)

  • Bake for 8-12 minutes or until cheese is melted and bubbly. For an extra golden top, broil for 1-2 minutes, watching carefully.

The Grand Finale (Topping & Serving)

  • Remove from oven and garnish generously with chopped cilantro, diced avocado or guacamole, sour cream or Greek yogurt, salsa, pickled red onions, and hot sauce as desired. Serve immediately.

Notes

For an even deeper smoky flavor, consider grilling the jalapeño before mincing. Adjust hot sauce to your preferred spice level. These nachos are best enjoyed fresh, but leftovers can be reheated in a low oven for a few minutes. shredded Monterey Jack cheese and shredded Cheddar cheese will provide the best melt and flavor.
