Slow Cooker Comfort Chicken and Dumplings

Ingredients
  

Main Ingredients

  • 2 lbs boneless, skinless chicken breasts or thighs
  • 1 large onion
  • 2 carrots
  • 2 celery stalks
  • 1 cup frozen peas
  • 4 cups chicken broth
  • 1 teaspoon dried thyme
  • 0.5 teaspoon dried sage
  • Salt and black pepper to taste
  • 1 can condensed cream of chicken soup 10.5 ounce
  • 0.5 cup heavy cream or milk optional

For the dumplings

  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 0.5 teaspoon salt
  • 1 cup milk
  • 0.25 cup unsalted butter melted

Instructions
 

Preparation

  • Lightly grease the inside of your slow cooker crock with cooking spray or butter.
  • Place chicken at the bottom of the slow cooker; scatter chopped onion, sliced carrots, and celery over the chicken.
  • Pour in chicken broth, then sprinkle with dried thyme, dried sage, salt, and black pepper.
  • Cover and cook on LOW for 6-8 hours or on HIGH for 3-4 hours, until chicken is cooked through and easily shredded.
  • Remove and shred chicken into bite-sized pieces; return the shredded chicken to the slow cooker.
  • Stir in the condensed cream of chicken soup and heavy cream (if using) into the slow cooker mixture.

Dumplings

  • In a medium bowl, whisk together flour, baking powder, and salt; add milk and melted butter, and stir until just combined to form a soft dough.
  • Drop spoonfuls of dumpling dough directly on top of the simmering chicken mixture in the slow cooker.
  • Cover tightly and continue to cook on HIGH for 30-45 minutes, or until dumplings are cooked through and fluffy.
  • Stir in frozen peas during the last 5-10 minutes of cooking; taste and adjust seasoning as needed.

Notes

For extra flavor, you can brown the chicken before adding it to the slow cooker. If you prefer a thicker sauce, you can make a cornstarch slurry and stir it in during the last 30 minutes of cooking.
