  • 10-12 large Ripe Bananas very ripe (brown-speckled)
  • 6 cups All-Purpose Flour
  • 3 cups Granulated Sugar
  • 3 teaspoons Baking Soda
  • 1.5 teaspoons Salt
  • 6 Large Eggs lightly beaten
  • 1.5 cups Unsalted Butter (3 sticks), melted and cooled
  • 3 teaspoons Vanilla Extract
  • 3 cups Optional Mix-ins chocolate chips, chopped nuts (walnuts or pecans), or a combination

Instructions
 

Preparation

  • Preheat your oven to 350°F (175°C) and prepare six standard loaf pans by greasing and flouring them, or lining with parchment paper.
  • In a large bowl, mash the ripe bananas until mostly smooth, leaving a few small lumps for texture.

Mixing

  • Add the beaten eggs, melted butter, and vanilla extract to the mashed bananas and stir well to combine.
  • In a separate bowl, whisk together the flour, granulated sugar, baking soda, and salt.
  • Gradually add the dry ingredients to the wet ingredients, stirring until just combined, being careful not to overmix.
  • Fold in any optional mix-ins such as chocolate chips or nuts.

Baking & Cooling

  • Divide the batter evenly among the six prepared loaf pans, filling each approximately two-thirds full.
  • Bake for 45-60 minutes, or until a wooden skewer inserted into the center comes out clean.
  • Allow the loaves to cool in their pans on a wire rack for 10-15 minutes before carefully removing them.
  • Let the loaves cool completely on the wire rack before slicing and serving.

Notes

For best results, use very ripe bananas with plenty of brown spots. You can store leftover banana bread at room temperature for a few days, or freeze individual slices for longer storage.
