  • 1 lb breakfast sausage
  • 6 slices day-old bread brioche, sourdough, or white bread
  • 8 large eggs
  • 2 cups milk whole or 2%
  • 1 tsp dry mustard
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 cups shredded cheddar cheese or Colby Jack blend

Preparation

  • Cook the breakfast sausage in a large skillet over medium-high heat until fully browned, breaking it apart with a spoon. Drain excess grease and let it cool slightly.
  • Lightly grease a 9x13-inch baking dish. Tear the bread slices into small pieces and spread them evenly over the bottom of the dish.
  • Sprinkle the cooked sausage evenly over the bread, then top with one cup of shredded cheese.
  • In a large bowl, whisk together eggs, milk, dry mustard, salt, and pepper until well combined.
  • Pour the egg mixture over the bread, sausage, and cheese in the baking dish, gently pressing down on the bread to ensure it absorbs the mixture.
  • Cover the baking dish and refrigerate for at least 30 minutes, or preferably overnight, to allow the bread to fully absorb the egg mixture.
  • Preheat your oven to 350°F (175°C). Remove the casserole from the refrigerator and uncover it.
  • Sprinkle the remaining cup of shredded cheese over the top of the casserole.
  • Bake for 45-55 minutes, or until the casserole is golden brown and a knife inserted in the center comes out clean.
  • Let the casserole rest for 5-10 minutes before slicing and serving to allow it to set.

Notes

For best results, prepare the casserole the night before and let it chill overnight. This significantly improves flavor and texture. Feel free to experiment with different types of cheese or add vegetables like sautéed onions or bell peppers for extra flavor.
