  • 1.5 lbs salmon fillets skin on or off, about 1-inch thick
  • 2-3 medium lemons for juice and slices
  • handful fresh parsley chopped
  • handful fresh dill chopped
  • handful fresh thyme chopped
  • Extra virgin olive oil
  • 2-3 cloves garlic minced
  • Salt to taste
  • Freshly ground black pepper to taste

  • red pepper flakes

Preparation

  • Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup.

Cooking

  • Pat the salmon fillets dry with paper towels and place them on the prepared baking sheet.
  • In a small bowl, whisk together olive oil, minced garlic, the juice of one lemon, chopped parsley, dill, and thyme; season with salt and pepper.
  • Pour the herb mixture evenly over the salmon fillets, ensuring they are well coated.
  • Slice the remaining lemon(s) into thin rounds and arrange them over and around the salmon fillets.
  • Bake for 12-18 minutes until the salmon flakes easily with a fork.

Serving

  • Remove from the oven, let it rest for a couple of minutes, then serve with optional lemon wedges, herbs, or red pepper flakes.

Notes

For best results, use fresh, high-quality salmon. Adjust baking time based on the thickness of your fillets. A meat thermometer can be used to check for doneness; salmon is typically cooked around 145°F (63°C).
