  • 1 lb lean ground turkey
  • 1 medium onion chopped
  • 2 cloves garlic minced
  • 1 cup uncooked long-grain white rice
  • 2 cups chicken broth
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 cup frozen mixed vegetables peas, carrots, corn, green beans work well
  • 1 tsp dried Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Optional Toppings and Garnish

  • 1/2 cup shredded cheddar cheese for topping
  • fresh parsley or cilantro chopped for garnish

  • Heat olive oil in a large, oven-safe skillet or Dutch oven over medium-high heat.
  • Add ground turkey to the skillet, break it up, and cook until fully browned (5-7 minutes). Drain any excess grease.
  • Stir in chopped onion and cook until softened (3-4 minutes), then add minced garlic and cook for another minute until fragrant.
  • Add uncooked rice, Italian seasoning, salt, and pepper; cook for 1-2 minutes, stirring constantly to lightly toast the rice.
  • Pour in chicken broth and undrained diced tomatoes. Bring to a boil, then reduce heat to low, cover, and simmer for 15-20 minutes until liquid is absorbed and rice is almost tender.
  • Stir in frozen mixed vegetables, re-cover, and cook for another 5-7 minutes until vegetables are heated through and rice is fully cooked and fluffy.
  • Optionally, sprinkle shredded cheddar cheese over the top, cover, and let sit for 1-2 minutes until melted and bubbly.
  • Remove from heat, let it rest for a few minutes, and garnish with fresh parsley or cilantro if desired before serving.

Notes

For best results, do not lift the lid too often during the simmering process to ensure the rice cooks evenly. If using a regular skillet, ensure it has a tight-fitting lid to trap steam effectively.
