Ingredients
  

For the Shrimp Sliders:

  • 1 lb Large raw shrimp, peeled and deveined fresh or frozen, thawed
  • 1 tbsp Olive oil
  • 0.5 tsp Garlic powder
  • 0.5 tsp Smoked paprika
  • 0.25 tsp Salt
  • 0.25 tsp Black pepper
  • 12 Hawaiian sweet slider buns or brioche slider buns
  • 2 cups Arugula or butter lettuce
  • 2 tbsp Fresh chives or dill finely chopped (optional, for garnish)

For the Festive Cranberry Mayo:

  • 0.5 cup Good quality mayonnaise full-fat recommended for best flavor
  • 0.25 cup Canned whole-berry cranberry sauce not jellied
  • 1 tsp Orange zest from one small orange
  • 1 tsp Orange juice optional, for thinning
  • 1 tsp Dijon mustard
  • 1 tsp Maple syrup or honey to taste
  • 1 pinch Ground cinnamon or nutmeg optional, for extra festivity
  • 1 pinch Salt and black pepper to taste Pinch of ground cinnamon or nutmeg (optional, for extra festivity)

Instructions
 

Festive Cranberry Mayo

  • Combine mayonnaise, cranberry sauce, orange zest, Dijon mustard, and maple syrup/honey in a bowl and stir until pinkish-red.
  • Adjust seasoning with salt, pepper, and optional cinnamon/nutmeg; add a splash of orange juice if too thick. Cover and refrigerate for at least 30 minutes, or overnight, for flavors to blend.

Cook Shrimp

  • Pat shrimp dry, then toss with olive oil, garlic powder, smoked paprika, salt, and pepper.
  • Cook shrimp in a hot skillet for 1-2 minutes per side until opaque and pink, without overcrowding the pan. Remove and set aside.

Assemble Sliders

  • Slice buns horizontally, lightly toast if desired, then spread cranberry mayo on bottom halves.
  • Layer arugula or lettuce on the mayo, add 1-2 cooked shrimp, and top with more mayo and the bun tops.
  • Arrange sliders on a platter and garnish with fresh chives or dill, if using.

Notes

For best flavor, make the cranberry mayo a day ahead. Don't overcrowd the pan when cooking shrimp to ensure even cooking. You can also grill the shrimp for an added smoky flavor. These sliders are great for parties or a festive lunch!
