  • 1 lb lean ground turkey
  • 1 tbsp olive oil
  • 1 large bell pepper any color, thinly sliced
  • 1 medium onion thinly sliced
  • 1 tbsp fajita seasoning or a mix of chili powder, cumin, paprika, garlic powder, onion powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper

For Serving (Optional)

  • 1/4 cup chopped fresh cilantro
  • lime wedges
  • whole-wheat tortillas or lettuce cups

Instructions
 

Preparation

  • Preheat your oven to 400°F (200°C) and prepare a large bowl.
  • In the bowl, combine ground turkey, olive oil, sliced bell pepper, onion, fajita seasoning, salt, and pepper; mix by hand until well combined, breaking up the turkey.

Cooking

  • Spread the mixture evenly in a single layer on a large baking sheet.
  • Bake for 20-25 minutes, or until the turkey is fully cooked and vegetables are tender-crisp; stir halfway through if desired for even browning.

Serving

  • Remove from the oven, garnish with fresh cilantro if using, and serve immediately with lime wedges, whole-wheat tortillas, or lettuce cups.

Notes

For meal prep, divide the cooked mixture into containers with your choice of tortillas or lettuce cups. Adjust fajita seasoning to your spice preference.
