  • 1.5 lbs Italian sausage mild or hot, cut into 1-inch pieces
  • 2 lbs Yukon Gold potatoes cut into 1-inch cubes
  • 3 tablespoons Olive Oil
  • 1 large Onion cut into thick wedges
  • 1 large Bell Pepper any color, chopped into 1-inch pieces
  • 4 cloves Garlic minced
  • 1 teaspoon Salt or to taste
  • 0.5 teaspoon Black Pepper or to taste
  • 1 tablespoon Fresh Rosemary chopped
  • 1 tablespoon Fresh Thyme chopped
  • 2 tablespoons Fresh Parsley chopped (for garnish)

Instructions
 

Preparation

  • Preheat the oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.
  • In a large bowl, combine the diced potatoes, onion wedges, chopped bell pepper, 2 tablespoons of olive oil, minced garlic, salt, pepper, chopped fresh rosemary, and fresh thyme and toss until evenly coated.
  • Spread the seasoned vegetables in a single layer on the prepared baking sheet.
  • Add the 1-inch cut Italian sausage pieces to the baking sheet, nestling them among the vegetables, then drizzle the remaining 1 tablespoon of olive oil over the sausage.
  • Bake for 25-30 minutes, stirring halfway through, until the potatoes are tender and golden brown, and the sausage is cooked through and slightly caramelized.
  • Remove from the oven, garnish with fresh chopped parsley, and serve hot.

Notes

For extra flavor, you can add a pinch of red pepper flakes to the vegetables before roasting. Adjust cooking time as needed based on the wattage of your oven and the size of your sausage pieces.
