  • 1 lb Italian sausage (sweet or hot, your preference), cut into 1-inch pieces if links
  • 2 large firm apples (such as Honeycrisp, Fuji, or Gala), cored and cut into 1-inch wedges
  • 1 large red onion cut into 1-inch wedges

Seasoning & Oil

  • 2 tbsp olive oil
  • 1 tsp dried rosemary
  • 1/2 tsp dried thyme
  • 1/4 tsp garlic powder
  • Salt and freshly ground black pepper to taste

Optional Sweetness

  • 1 tbsp maple syrup or honey for a touch more sweetness

Preparation

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper for easy cleanup.

Combine and Season

  • In a large bowl, combine the sausage pieces, apple wedges, and red onion wedges.
  • Drizzle with olive oil, then sprinkle with rosemary, thyme, garlic powder, salt, and pepper; add maple syrup or honey if desired. Toss gently until everything is well coated.

Roast and Serve

  • Spread the mixture in a single layer on the prepared baking sheet, ensuring adequate space for even roasting.
  • Roast for 25-30 minutes, stirring and flipping halfway through, until the sausage is cooked and the apples and onions are tender and caramelized.
  • Remove from the oven and serve immediately while hot.

Notes

For crisper vegetables, avoid overcrowding the baking sheet; use two sheets if necessary to ensure sufficient space between ingredients.
