  • 1/2 pound breakfast sausage
  • 6 large eggs
  • 2 tablespoons milk
  • 1/4 teaspoon salt
  • 1/8 teaspoon black pepper
  • 4 flour tortillas (8-inch)
  • 1/2 cup shredded cheddar cheese

Preparation

  • In a skillet, cook the breakfast sausage over medium heat, breaking it apart, until it is browned and cooked through. Drain any excess grease and set the sausage aside.
  • In a medium bowl, whisk together the eggs, milk, salt, and pepper until well combined.
  • Pour the egg mixture into the same skillet (or a clean one if preferred) over medium heat. Scramble the eggs until they are cooked to your desired consistency. Remove from heat.

Assembly

  • Warm the flour tortillas according to package directions, either in a microwave or a dry skillet, to make them pliable.
  • Lay each warm tortilla flat. Spoon a portion of the scrambled eggs onto the center of each tortilla, followed by a sprinkle of cooked sausage and shredded cheddar cheese.
  • To roll up, fold in the sides of the tortilla over the filling, then tightly roll it from the bottom up.
  • Serve the Sausage Egg Breakfast Roll-Ups immediately with your favorite optional toppings like salsa, sour cream, or hot sauce.

Notes

These roll-ups are great for meal prep too! Cook all components, assemble, wrap individually in plastic wrap, and store in the refrigerator for up to 3 days. Reheat in the microwave or oven until warmed through.
