Salted Caramel Apple Pie Cookies

Ingredients
  

For the Cookies

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup light brown sugar, packed
  • 1 large egg
  • 1 teaspoon vanilla extract

For the Apple Filling

  • 2 medium apples, peeled, cored, and finely diced
  • 2 tablespoons granulated sugar
  • 1/2 teaspoon cinnamon
  • 1 tablespoon lemon juice

For the Salted Caramel Drizzle

  • 1/2 cup caramel sauce
  • 1/4 teaspoon sea salt

Instructions
 

Prepare the Apple Filling

  • In a small saucepan, combine diced apples, granulated sugar, cinnamon, and lemon juice. Cook over medium heat for 5-7 minutes until apples are softened.
  • Remove from heat and let cool completely.

Make the Cookie Dough

  • In a medium bowl, whisk together flour, baking soda, and salt.
  • In a large bowl, cream together softened butter, granulated sugar, and light brown sugar until light and fluffy.
  • Beat in the egg and vanilla extract until well combined.
  • Gradually add the dry ingredients to the wet ingredients, mixing until just combined.

Assemble and Bake

  • Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
  • Drop spoonfuls of cookie dough onto the prepared baking sheet, then flatten lightly.
  • Place a small spoonful of cooled apple filling in the center of each flattened cookie.
  • Top with another spoonful of cookie dough, gently pressing the edges to seal the filling.
  • Bake for 10-12 minutes, or until the edges are golden brown.
  • Let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Salted Caramel Drizzle

  • In a small bowl, whisk together caramel sauce and sea salt.
  • Once cookies are completely cool, drizzle with the salted caramel sauce.

Notes

For extra flavor, you can add a pinch of nutmeg or allspice to the apple filling. Ensure the apple filling is completely cool before adding it to the cookie dough to prevent the cookies from spreading too much.
