  • 4 tablespoons all-purpose flour
  • 4 tablespoons granulated sugar
  • 2 tablespoons unsweetened cocoa powder
  • ¼ teaspoon baking powder
  • salt Pinch
  • 4 tablespoons milk
  • 2 tablespoons vegetable oil
  • 2 tablespoons chocolate chips or chunks
  • ½ cup fresh raspberries
  • 1 tablespoon granulated sugar for raspberry syrup
  • 2 ounces raspberry liqueur (like Chambord), optional
  • 1 bottle chilled rosé sparkling wine (750ml)
  • fresh mint leaves for garnish
  • Vanilla ice cream or fresh berries for serving (for lava cake)

Instructions
 

Prepare the Raspberry Syrup

  • Combine ½ cup fresh raspberries and 1 tablespoon granulated sugar in a small saucepan, then cook over medium heat, stirring occasionally, until the raspberries break down and form a syrup (about 5-7 minutes).
  • Strain the raspberry syrup through a fine-mesh sieve into a small bowl, pressing on the solids to extract all liquid, then discard the solids and let the syrup cool.

Prepare the Chocolate Lava Cakes

  • In a microwave-safe mug (or two if making two cakes), whisk together the flour, 4 tablespoons granulated sugar, cocoa powder, baking powder, and a pinch of salt.
  • Stir in 4 tablespoons milk and 2 tablespoons vegetable oil until the mixture is smooth, then fold in 2 tablespoons of chocolate chips or chunks.
  • Microwave on high for 60-90 seconds (cooking time varies), ensuring cakes are set on the outside but gooey in the center; then carefully remove and let cool slightly before serving.

Prepare the Sparkling Raspberry Rosé

  • To assemble each drink, add 1 tablespoon of the prepared raspberry syrup and 1 ounce of raspberry liqueur (if using) into a champagne flute.
  • Top the mixture in the champagne flute with chilled sparkling rosé.

Serve

  • Serve the warm Chocolate Lava Cakes immediately with a scoop of vanilla ice cream or fresh berries, and garnish the Sparkling Raspberry Rosé with a fresh raspberry and a sprig of mint.

Notes

The raspberry syrup can be made ahead of time. Microwave cooking times may vary; adjust as needed to achieve a gooey lava cake center.
