  • 1 fresh cucumber
  • 4 oz feta cheese
  • 1 tbsp extra virgin olive oil
  • 1 tbsp fresh mint, finely chopped
  • 1 tbsp fresh dill, finely chopped
  • Black pepper, freshly ground to taste
  • Small skewers or toothpicks

Instructions
 

Preparation

  • Wash the cucumber, then peel and deseed if necessary before slicing into 1/2 to 3/4 inch thick rounds.
  • Drain the feta cheese and cut it into 1/2 to 3/4 inch cubes, matching the size of the cucumber slices.
  • Thread cucumber and feta onto small skewers, alternating for 2-3 cucumber slices and 2 feta cubes per skewer.

Assembly and Serving

  • Arrange the skewers on a platter and lightly drizzle with extra virgin olive oil.
  • Generously sprinkle the chopped fresh mint and dill over the skewers.
  • Finish with freshly ground black pepper to taste.
  • Serve immediately, or if preparing in advance, add oil, herbs, and pepper just before serving after keeping them chilled.

Notes

For an extra touch of flavor, you can marinate the feta cubes in a little olive oil with a pinch of red pepper flakes for about 30 minutes before assembling the skewers. Ensure all ingredients are fresh for the best taste and texture. You can also add cherry tomatoes for a pop of color and additional flavor.
