  • 1 cup strawberries hulled and sliced
  • 1 cup raspberries
  • 1 cup red grapes
  • 1 cup orange slices mandarins or segmented oranges
  • 1 cup cantaloupe cubed and some cut with cookie cutters
  • 1 cup pineapple spears and some cut with cookie cutters
  • 2 bananas sliced (tossed in lemon juice)
  • 1 cup kiwi peeled and sliced into rounds
  • 1 cup green grapes
  • 1 cup honeydew cubed
  • 1 cup blueberries
  • 1 cup blackberries

Preparation

  • Wash all fruits thoroughly under cool running water and pat them dry.
  • Prepare the fruits by hulling strawberries, peeling and segmenting oranges/mandarins, and coring the pineapple.
  • Slice larger fruits like watermelon, cantaloupe, pineapple, and kiwi into bite-sized pieces.
  • Toss sliced bananas immediately with a small amount of lemon juice to prevent browning.
  • Use cookie cutters to cut some cantaloupe and pineapple into fun shapes like stars, hearts, or animals.

Arrangement

  • On a large platter, arrange the fruits by color to create a rainbow arch.
  • For the red section, use strawberries, raspberries, and red grapes. For orange, arrange orange slices and cantaloupe cubes/shapes. Pineapple spears/shapes and banana slices make up the yellow section. Kiwi slices, green grapes, and honeydew cubes form the green section. Finally, blueberries and blackberries create the blue/purple section.
  • Create fruit critters in the center or around the rainbow. Make "Caterpillars" by skewering green grapes with a strawberry head and blueberry eyes, and "Butterflies" by arranging two orange slices as wings with a grape body.
  • Scatter the cookie-cut fruit shapes throughout the platter.
  • Optionally, arrange small bowls of dips like Greek yogurt or honey-lime drizzle on or alongside the platter.
  • Garnish with fresh mint leaves for added color and aroma.
  • Serve immediately and enjoy the vibrant, fun display!
