Main Ingredients

  • 1 can (15 oz) chickpeas rinsed and drained
  • 1 bell pepper any color, diced
  • 1/2 red onion thinly sliced
  • 1 cup cherry tomatoes halved
  • 2 cups mixed greens spinach, kale, or spring mix

Dressing

  • 2 tbsp olive oil
  • 1 lemon juiced
  • 1 tsp dried oregano
  • 1/2 tsp dried thyme
  • Salt and black pepper to taste

Optional Topping

  • 1/4 cup crumbled feta cheese or nutritional yeast for cheesy flavor

Preparation

  • In a large bowl, combine chickpeas, diced bell pepper, sliced red onion, and halved cherry tomatoes.

Make the Dressing

  • Whisk together olive oil, lemon juice, oregano, thyme, salt, and pepper in a small bowl to create the dressing.

Combine and Serve

  • Pour the dressing over the chickpea and vegetable mixture and toss gently to coat.
  • Divide mixed greens into two serving bowls, then spoon the dressed chickpea and veggie mixture over the greens.
  • Optionally, sprinkle with feta cheese or nutritional yeast before serving immediately.

Notes

For extra protein, you can add grilled chicken or tofu. Adjust herbs and spices to your preference. This bowl is also great for meal prepping: store the dressing and chickpea mixture separately and combine just before serving to keep the greens fresh.
