Quick & Crispy Spiced Wheat Dosa (Godhuma Dosa)

Ingredients
  

Dosa Batter

  • 1 cup whole wheat flour
  • 2 tablespoons fine semolina
  • 1 small onion finely chopped
  • 1-2 green chillies finely chopped (adjust to taste)
  • 1 teaspoon grated ginger
  • 2 tablespoons chopped cilantro
  • 1 teaspoon salt or to taste
  • 1.5-2 cups water adjust as needed for consistency
  • Oil or ghee for cooking

Optional Tempering

  • 1 teaspoon oil
  • 0.5 teaspoon mustard seeds
  • 0.5 teaspoon cumin seeds
  • Pinch asafoetida
  • A few curry leaves

Instructions
 

Preparation

  • In a large bowl, mix whole wheat flour, semolina, and salt.
  • Stir in the chopped onion, grated ginger, green chillies, and cilantro.

Tempering (Optional)

  • Heat oil in a small pan, then add mustard seeds, cumin seeds, asafoetida, and curry leaves.
  • Once mustard seeds splutter, pour the tempering into the flour mixture.

Batter & Rest

  • Gradually add water to the dry ingredients, whisking until a thin pancake-like batter forms.
  • Let the batter rest for 15-20 minutes to allow the flour and semolina to absorb water.

Cooking

  • Heat a greased non-stick tawa or cast-iron griddle over medium-high heat.
  • Pour a ladleful of batter onto the griddle, spreading it in a circular motion to form a thin dosa.
  • Drizzle oil or ghee around the edges and over the dosa, cooking for 2-3 minutes until golden brown and crispy.
  • Fold the dosa and serve hot immediately with your preferred chutney or sambar.

Notes

Adjust water quantity for desired batter consistency; it should be thin enough to spread easily but not watery. Ensure your griddle is hot enough before pouring the batter for a crispy dosa. You can experiment with other finely chopped vegetables like carrots or bell peppers in the batter for added nutrition and flavor.
