Main Ingredients

  • 1 tbsp olive oil
  • 1 small onion chopped
  • 2 garlic cloves minced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1 can (15 oz) cannellini beans rinsed and drained
  • 1/2 cup small pasta e.g., ditalini or orzo

Seasoning & Garnish

  • Salt and pepper to taste
  • fresh parsley chopped, for garnish

Instructions
 

Preparation

  • Heat olive oil in a large pot over medium heat, then add chopped onion and sauté until softened for about 5 minutes.
  • Stir in minced garlic and cook for 1 minute more until fragrant.
  • Pour in vegetable broth and diced tomatoes, then bring the mixture to a boil.
  • Add rinsed cannellini beans and small pasta, reduce heat to a simmer, and cook until pasta is al dente (about 8-10 minutes).
  • Season the soup with salt and pepper to taste.
  • Ladle the soup into bowls and garnish with fresh chopped parsley before serving.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. Feel free to use any small pasta shape you have on hand.
