  • 1 lb small baby potatoes (Yukon Golds or red potatoes) quartered
  • 1 head broccoli cut into florets
  • 4-5 cloves garlic minced
  • 1/2 cup unsalted butter melted
  • 2 tbsp olive oil
  • 1/2 lemon lemon juiced
  • 1 tsp dried Italian seasoning
  • 1/2 tsp paprika
  • Salt and black pepper to taste
  • 2 tbsp fresh parsley chopped (optional, for garnish)

  • Preheat oven to 400°F (200°C) and line a large sheet pan with parchment paper.
  • Combine chicken pieces, potatoes, and broccoli florets in a large bowl.
  • Whisk together melted butter, olive oil, minced garlic, lemon juice, Italian seasoning, paprika, salt, and pepper in a separate small bowl.
  • Pour the garlic butter sauce over the chicken and vegetables, then toss until evenly coated.
  • Spread the mixture on the prepared sheet pan and roast for 25-30 minutes, flipping halfway through, until chicken cooks through and vegetables are tender.
  • Remove from oven, garnish with parsley if desired, and serve immediately.

Notes

For extra crispiness, you can broil for the last few minutes, keeping a close eye to prevent burning. Remember to adjust seasoning to your taste!
