  • 2 cups rolled oats not instant
  • 2 medium-sized apples cored and diced (Honeycrisp, Granny Smith, or Fuji work wonderfully)
  • 1/2 cup brown sugar packed
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 cups milk dairy or non-dairy like almond or oat milk
  • 1 large egg
  • 1/4 cup melted butter or coconut oil
  • 1 teaspoon vanilla extract

Preparation

  • Preheat your oven to 375°F (190°C) and lightly grease an 8x8 inch baking dish.

Mixing

  • In a large bowl, whisk together the dry ingredients: rolled oats, diced apples, brown sugar, cinnamon, nutmeg, ginger, baking powder, and salt, ensuring apples are well coated.
  • In a separate medium bowl, whisk milk, egg, melted butter or coconut oil, and vanilla extract until fully combined.
  • Pour the wet mixture over the dry ingredients and stir gently until just moistened, being careful not to overmix.

Baking & Serving

  • Evenly pour the mixture into the prepared baking dish, sprinkling optional toppings like nuts or dried fruit over the top if desired.
  • Bake for 30-40 minutes, or until golden brown and liquid is absorbed; a knife inserted in the center should come out mostly clean.
  • Let the bake rest for 5-10 minutes before serving to allow it to set.

Notes

For extra flavor, toast the oats lightly before adding them to the dry ingredients. You can also add a pinch of cardamom for a unique twist. This bake is delicious served warm with a dollop of Greek yogurt or a spoonful of apple butter.
