  • 1 lb pre-cooked mini Italian sausages cut into 1-inch pieces
  • 1 large bell pepper (any color) cut into 1-inch squares
  • 1/2 red onion cut into 1-inch pieces
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • Salt and freshly ground black pepper to taste
  • 1/4 cup balsamic glaze optional, for drizzling

Preparation

  • Preheat your oven to 400°F (200°C) to get it ready for baking.
  • In a spacious bowl, combine the cut mini sausages, bell pepper squares, and red onion pieces.
  • Drizzle olive oil over the ingredients, then sprinkle with Italian seasoning, salt, and pepper, tossing gently to ensure everything is evenly coated.

Assembling and Baking

  • Carefully thread the seasoned sausage, bell pepper, and red onion pieces onto the small skewers, alternating them for an attractive presentation.
  • Arrange the assembled skewers on a baking sheet that has been lined with parchment paper.
  • Bake the skewers for 15-20 minutes, or until the vegetables turn tender-crisp and the sausages are thoroughly heated.

Serving

  • If desired, drizzle balsamic glaze over the skewers just before serving them hot.

Notes

For extra flavor, you can marinate the vegetables in the olive oil and seasoning for 15-30 minutes before threading them onto the skewers. If you don't have pre-cooked sausages, make sure to cook them fully before cutting and assembling the skewers.
