  • 2 large Eggs (poached or fried)
  • 2 tablespoons Hummus
  • handful Cherry Tomatoes halved
  • 1/4 Cucumber diced
  • 5-6 Kalamata Olives pitted and halved
  • 1/2 Whole-wheat Pita Bread warmed and cut into triangles
  • 1 tablespoon Feta Cheese crumbled
  • 1 teaspoon Fresh Parsley chopped
  • Olive Oil Drizzle
  • Salt and Black Pepper To taste

Instructions
 

Preparation

  • Cook your eggs by poaching or frying them sunny-side up until the whites are set and yolks are runny.
  • Halve the cherry tomatoes, dice the cucumber, and pit and halve the Kalamata olives.
  • Warm the pita bread in a pan and then cut it into triangles.

Assembly

  • Spread hummus on a plate, then arrange the eggs, vegetables, and olives around it.
  • Sprinkle with feta and parsley, drizzle with olive oil, and season with salt and pepper.

Serving

  • Serve immediately with the warm pita bread.

Notes

For poached eggs, add a splash of vinegar to the water to help the whites set. Adjust seasoning to your preference.
