  • 1 lb lean ground turkey (93% or higher)
  • 2 cups zucchini chopped
  • 2 cups fresh spinach
  • 1/4 cup sun-dried tomatoes chopped (optional)

Seasonings & Oil

  • 1 tbsp olive oil if needed for browning, otherwise turkey fat is enough
  • 1 tsp dried oregano
  • 1/2 tsp garlic powder
  • 1/4 tsp black pepper
  • red pepper flakes Pinch (optional, for a kick)

To Taste & Garnish

  • Salt to taste
  • Fresh parsley or cilantro for garnish (optional)
  • Lemon wedges for serving (optional)

Cooking Steps

  • Heat a large skillet over medium-high heat and brown the lean ground turkey, breaking it up until no longer pink.
  • If necessary, carefully drain any excess fat from the skillet.
  • Add zucchini, oregano, garlic powder, black pepper, and optional red pepper flakes; cook for 5-7 minutes until zucchini softens.
  • Stir in fresh spinach and sun-dried tomatoes (if using), and cook for 2-3 minutes until the spinach wilts.
  • Reduce heat to low and simmer for 2-3 minutes to meld flavors, then add salt to taste.
  • Serve hot, optionally garnished with fresh parsley or cilantro and a squeeze of lemon juice.

Notes

For an extra boost of flavor, consider adding a squeeze of fresh lemon juice at the end. You can also customize by adding other Mediterranean vegetables like bell peppers or cherry tomatoes.
