  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 medium red onion finely chopped
  • 2 cloves garlic minced
  • 1 pint cherry tomatoes halved
  • 5 oz fresh spinach
  • 1/2 cup crumbled feta cheese
  • 1/4 cup fresh parsley chopped
  • 1 tsp dried oregano
  • Salt and black pepper to taste
  • Cooked quinoa or couscous for serving

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey, break it up, and cook until browned for 5-7 minutes; drain excess fat.
  • Add chopped red onion and minced garlic to the skillet with the turkey and sauté for 3-4 minutes until softened and fragrant.
  • Stir in the halved cherry tomatoes and dried oregano, cooking for another 3-5 minutes until the tomatoes soften.
  • Add fresh spinach to the skillet and cook, stirring occasionally, until it wilts down in 2-3 minutes.
  • Season generously with salt and black pepper to taste.
  • Remove from heat, then stir in the crumbled feta cheese and fresh parsley.
  • Serve the Mediterranean ground turkey mixture warm over cooked quinoa or couscous.

Notes

For a spicier kick, add a pinch of red pepper flakes with the oregano. These bowls are great for meal prep and can be stored in the refrigerator for up to 3 days.
