  • 1 tbsp olive oil
  • 1 lb lean ground turkey
  • 1 chopped medium onion
  • 3 cloves garlic minced
  • 1 can (14.5 oz) diced tomatoes undrained
  • 1/2 cup Kalamata olives halved
  • 1/2 cup feta cheese crumbled
  • 1/4 cup fresh parsley chopped
  • 1 tsp dried oregano
  • Salt and black pepper to taste

Cooking Steps

  • Heat olive oil in a large skillet over medium-high heat. Add ground turkey and cook until browned and no longer pink, breaking it up with a spoon.
  • Drain any excess fat from the skillet.
  • Add chopped onion to the skillet and cook for 3-5 minutes until softened. Stir in minced garlic and dried oregano, cooking for another minute until fragrant.
  • Stir in the diced tomatoes (with their juices) and Kalamata olives. Bring the mixture to a simmer.
  • Reduce heat to low, cover, and let it simmer for 5-7 minutes to allow the flavors to meld.
  • Remove from heat. Stir in crumbled feta cheese and chopped fresh parsley. Taste and adjust seasoning with salt, pepper, and an optional squeeze of lemon juice.
  • Serve hot, optionally with couscous or a side salad.

Notes

This dish pairs wonderfully with a side of couscous, quinoa, or a simple green salad. For extra zest, a final squeeze of fresh lemon juice before serving is highly recommended.
