  • 2 large eggs
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1/2 cup cherry tomatoes halved
  • 1 cup fresh spinach
  • 1/4 cup crumbled feta cheese
  • Salt to taste
  • Freshly ground black pepper to taste
  • Fresh parsley or dill chopped for garnish (optional)

Cooking

  • Heat olive oil in a non-stick skillet over medium heat. Sauté minced garlic for 30 seconds until fragrant, then add halved cherry tomatoes and cook for 2-3 minutes until they soften.
  • Stir in fresh spinach and cook for 1-2 minutes until wilted, seasoning lightly with salt and pepper.
  • Whisk eggs with salt and pepper in a small bowl, then pour over the cooked vegetables in the skillet.
  • Let eggs cook undisturbed for 1-2 minutes until edges set; gently push edges towards the center to allow uncooked egg to flow underneath. Continue cooking until desired consistency.
  • Remove from heat, sprinkle with feta cheese, and garnish with fresh parsley or dill if desired. Serve immediately.

Notes

For extra flavor, you can add a pinch of red pepper flakes with the garlic. Adjust the amount of feta cheese to your liking.
