Ingredients
  

Main Ingredients

  • 2-3 large eggs
  • 1 tablespoon milk or cream optional
  • 1 teaspoon butter or oil
  • Salt and freshly ground black pepper to taste
  • 1/4 cup diced tomatoes
  • 2 tablespoons black olives, sliced
  • 1 tablespoon red onion, finely diced
  • 1/4 cup crumbled feta cheese

Instructions
 

Preparation

  • Dice tomatoes and red onion, slice black olives, and crumble feta cheese.
  • Whisk eggs with optional milk or cream, salt, and pepper until combined and slightly frothy.
  • Heat a non-stick skillet over medium-high heat with butter or oil until shimmering.

Cooking

  • Pour egg mixture into the hot pan, let edges set, then push cooked egg from edges to center, tilting the pan.
  • Repeat until most egg is set but the top is still moist.
  • Evenly sprinkle diced tomatoes, sliced black olives, red onion, and crumbled feta cheese over half of the omelet.

Serving

  • Once filling is warm, fold the unfilled half of the omelet over the filled half.
  • Gently slide onto a plate and serve immediately.

Notes

For extra flavor, you can toast some pita bread and serve it alongside the omelet. A sprinkle of fresh parsley or oregano on top would also be a delightful addition. Adjust cooking time based on your preferred egg consistency.
