  • 1 lb boneless, skinless chicken breast cut into 1-inch cubes
  • 2 bell peppers (any color) seeded and cut into 1-inch strips
  • 1 pint cherry tomatoes

Seasoning

  • 2 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper

  • Fresh parsley or a squeeze of lemon for garnish after baking

  • Preheat your oven to 400°F (200°C) and line a large baking sheet with parchment paper.
  • In a large bowl, combine the cubed chicken, bell pepper strips, and cherry tomatoes.

Seasoning & Baking

  • Drizzle the ingredients with olive oil and sprinkle with dried oregano, garlic powder, salt, and black pepper; toss until well coated.
  • Spread the mixture on the prepared baking sheet in a single layer to ensure roasting, using two pans if necessary.
  • Bake for 20-25 minutes, or until the chicken is cooked through and vegetables are tender-crisp.

Serving

  • Remove from the oven and serve immediately, garnishing with fresh parsley or lemon juice if desired.

Notes

For an extra touch, marinate the chicken in a little olive oil and lemon juice for 30 minutes before roasting to enhance the flavor and tenderness.
