Ingredients
  

Casserole

  • 12 large eggs
  • 1/2 cup milk (or unsweetened almond milk)
  • 1 cup cooked chicken sausage, crumbled (or diced ham)
  • 1 cup fresh spinach, chopped
  • 1/2 cup sun-dried tomatoes, packed in oil, drained and chopped
  • 1/4 cup Kalamata olives, pitted and sliced
  • 1/2 cup crumbled feta cheese
  • 1 small red onion, finely diced
  • 1 bell pepper (any color), finely diced
  • 1 tablespoon fresh oregano, chopped (or 1 teaspoon dried)
  • 1/2 teaspoon garlic powder
  • Salt and black pepper to taste
  • Olive oil or cooking spray for greasing

Instructions
 

Preparation

  • Preheat the oven to 375°F (190°C) and lightly grease a 9x13 inch baking dish.
  • In a large bowl, whisk together eggs, milk, garlic powder, salt, and black pepper.
  • Add the chicken sausage, spinach, sun-dried tomatoes, olives, feta cheese, red onion, bell pepper, and oregano to the egg mixture, then stir gently to combine.
  • Pour the mixture into the prepared baking dish.

Baking & Cooling

  • Bake for 30-40 minutes, or until the eggs are set and a knife inserted into the center comes out clean.
  • Allow the casserole to cool completely before slicing into individual portions.

Storage

  • Store individual portions in airtight containers in the refrigerator for 3-4 days or freeze for 2-3 months. Reheat as needed.

Notes
