  • 1 teaspoon Worcestershire sauce

Preparation

  • Thinly slice all the yellow onions, ensuring uniform slices for even cooking.

Caramelize Onions

  • Melt butter over medium heat in a large skillet; add sliced onions and a pinch of salt. Cook for 15-20 minutes, stirring occasionally, until soft and golden brown.

Slow Cook

  • Transfer browned onions to the slow cooker with beef broth, sherry, Worcestershire sauce, garlic, thyme, and bay leaf. Season with salt and pepper.
  • Cook on LOW for 6-8 hours or HIGH for 3-4 hours to deepen the flavors and tenderize the onions.

Finish Soup

  • Remove thyme sprigs and bay leaf; taste and adjust seasonings as needed.

Broil and Serve

  • Preheat broiler and arrange toasted baguette slices on a baking sheet.

If you don't have dry sherry or brandy, balsamic vinegar is a good substitute that adds similar depth.
