  • 1 tablespoon extra virgin olive oil plus more for drizzling

  • 1/4 cup toasted pistachios roughly chopped
  • 2 tablespoons fresh mint leaves torn or finely chopped
  • Crostini, crusty bread, or pita chips for serving

  • Gently whip the ricotta in a small bowl until light and smooth, then season lightly with salt and pepper.
  • Spread the whipped ricotta onto a shallow serving dish, creating a slight well in the center.
  • Generously drizzle the hot honey over the entire surface of the ricotta.
  • Arrange the chopped toasted pistachios and torn fresh mint leaves over the hot honey and ricotta.
  • Drizzle a touch of extra virgin olive oil over the finished dip just before serving.
  • Serve immediately with your choice of crostini, crusty bread, or pita chips.

Notes

For an extra touch of flavor, you can gently warm the hot honey before drizzling. Adjust the amount of hot honey to your preferred level of sweetness and spice. This dip is best served fresh; however, leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
