Lemon-Herb Skillet Chicken with Roasted Broccoli

  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch pieces
  • 2 tbsp olive oil
  • 1 lb broccoli florets
  • 1 lemon juiced and zested
  • 2 cloves garlic minced
  • 1 tsp dried Italian herbs oregano, basil, thyme blend
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup chicken broth
  • chopped fresh parsley for garnish, optional

Preparation

  • Preheat your oven to 400°F (200°C).
  • Toss broccoli with 1 tbsp olive oil, half the garlic, 1/4 tsp salt, and 1/8 tsp pepper in a bowl. Spread on a baking sheet and roast for 15-20 minutes until tender-crisp.
  • Season chicken pieces with the remaining salt and pepper, Italian herbs, and lemon zest.
  • Heat the remaining 1 tbsp olive oil in a large skillet over medium-high heat. Sear chicken for 3-4 minutes per side until golden brown.
  • Add the remaining minced garlic to the skillet and cook for 1 minute until fragrant.
  • Pour in chicken broth and lemon juice; simmer for 2-3 minutes, scraping the pan, until liquid slightly reduces and chicken is cooked through.
  • Remove from heat. Combine roasted broccoli with chicken in the skillet or a serving dish.
  • Garnish with fresh chopped parsley if desired and serve immediately.

Notes

For extra flavor, you can marinate the chicken in the lemon-herb mixture for 30 minutes before cooking. Ensure your skillet is oven-safe if you plan to combine the broccoli and chicken directly in it right after roasting for easy cleanup.
