Lemon-Herb Salmon with Crisp Steamed Greens

Ingredients
  

Main Ingredients

  • 1.5-2 lbs Salmon Fillets skin-on or off
  • 1 head Broccoli cut into florets
  • 1 bunch Asparagus tough ends trimmed
  • 2 medium Carrots peeled and thinly sliced

Seasoning & Garnish

  • 2 tbsp Olive Oil plus extra for drizzling
  • 1 Lemon half sliced for garnish, half for juicing
  • Fresh Dill a few sprigs, chopped, for garnish
  • Fresh Parsley a few sprigs, chopped, for garnish
  • Salt To taste
  • Freshly Ground Black Pepper To taste
  • 1 tsp Garlic Powder

Instructions
 

Preparation

  • Pat the salmon fillets dry and season generously with salt, pepper, and garlic powder, then drizzle with olive oil.
  • In a large pot with a steamer basket, bring an inch of water to a boil, then add carrots and steam for 3-4 minutes.

Cooking

  • Add broccoli and asparagus to the steamer basket with the carrots and steam for another 4-6 minutes until crisp-tender.
  • While vegetables steam, heat 1 tbsp olive oil in a skillet over medium-high heat and pan-sear salmon skin-side down for 4-6 minutes until crispy, then flip and cook for another 3-5 minutes until done.

Serving

  • Remove the salmon and vegetables from heat, drizzle with fresh lemon juice and extra olive oil, then garnish with fresh dill and parsley.

Notes

For best results, do not overcook the salmon; it should flake easily with a fork. Adjust seasoning to your preference and feel free to add other herbs like thyme or oregano.
