  • 4 salmon fillets 6oz, skin-on or skinless
  • 1 cup jasmine rice
  • 2 cups water or broth
  • 2 tbsp olive oil
  • lemon half sliced for baking, half for juice and wedges
  • 2 cloves garlic minced
  • 1 tbsp fresh dill chopped (or 1 tsp dried)
  • 1 tbsp fresh parsley chopped
  • Salt and black pepper to taste

  • Steamed green beans or asparagus

Instructions
 

Prepare the rice

  • Rinse jasmine rice, then combine with water or broth in a saucepan. Bring to a boil, then simmer covered for 15 minutes until liquid is absorbed.

Preheat oven and prepare salmon

  • Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper. Pat salmon fillets dry with paper towels.

Season the salmon

  • Whisk together olive oil, minced garlic, dill, parsley, lemon juice, salt, and pepper. Drizzle this mixture over the salmon fillets on the baking sheet and top each with a lemon slice.

Bake the salmon

  • Bake for 12-18 minutes, depending on thickness, until salmon flakes easily and is opaque in the center.

Assemble and Serve

  • Divide fluffed rice among plates, top with baked salmon, and serve immediately with a fresh lemon wedge and optional vegetables.

Notes

For extra flavor, marinate the salmon in the lemon-herb mixture for 15-30 minutes before baking. Ensure the salmon is properly dried before seasoning to get a nice crust. Adjust baking time based on the thickness of your salmon fillets to prevent overcooking, which can lead to dry fish.
