  • 1 Acorn Squash
  • 2 tbsp Honey
  • 2 tbsp Unsalted Butter
  • 1/2 tsp Cinnamon
  • 1/4 tsp Salt
  • 1 tbsp Olive Oil

Preparation

  • Preheat oven to 400°F (200°C), then wash and cut the acorn squash in half lengthwise, scooping out the seeds.
  • Melt butter in a microwave-safe bowl, then stir in honey, cinnamon, and a pinch of salt until combined.
  • Place squash on a parchment-lined baking sheet, drizzle with olive oil, then brush generously with the honey-butter glaze.

Cooking

  • Roast for 25-40 minutes until tender and caramelized; halves may take longer than slices.
  • Remove from oven and serve hot.

Notes

For extra caramelization, flip slices halfway through and re-glaze, or baste halves with pan drippings.
