  • 1 tablespoon olive oil
  • 1.5 lbs lean ground turkey
  • 1 large onion chopped
  • 2 cloves garlic minced
  • 1 can crushed tomatoes 28 ounce
  • 1 can diced tomatoes 15 ounce, undrained
  • 1 can kidney beans 15 ounce, rinsed and drained
  • 1 can black beans 15 ounce, rinsed and drained
  • 1 cup chicken or vegetable broth
  • 2 tablespoons chili powder
  • 1 tablespoon cumin
  • 1 teaspoon smoked paprika
  • 0.5 teaspoon dried oregano
  • 0.25 teaspoon cayenne pepper optional, for a kick
  • Salt to taste
  • Black pepper to taste

Cooking Instructions

  • Heat the olive oil in a large skillet over medium-high heat. Add ground turkey and cook until no longer pink, then drain excess fat.
  • Add chopped onion to the skillet and cook until softened, then stir in minced garlic and cook for one minute until fragrant.
  • Transfer the turkey and onion mixture to the slow cooker. Add crushed tomatoes, diced tomatoes, kidney beans, black beans, and broth.
  • Stir in chili powder, cumin, smoked paprika, oregano, and cayenne pepper (if using). Season generously with salt and black pepper.
  • Stir all ingredients, cover, and cook on LOW for 6-8 hours or HIGH for 3-4 hours until flavors meld and chili is heated through.
  • Taste and adjust seasonings as needed, then ladle into bowls and serve with your favorite toppings.

Notes

This chili is even better the next day as the flavors have more time to meld. Feel free to adjust the cayenne pepper to your preferred spice level. Serve with toppings like shredded cheese, sour cream, fresh cilantro, or cornbread.
